View Full Version : Brinjal(Aubergine) Pickle

Small Brinjals = 15
Salt= 2 tablespoon
Garlic=30
Ginger= 4 inch
Few Curry leaves
Sugar= 1.5 cup
Oil=2.5-3.0 cups
Vinegar=2.5-3.0 cups
Turmeric=2 tablespoon

Part II
====

Garlic=80 (separately Grind it)
Red chillies=40 (separately Grind it)

(Grind the following together)
Mustard seeds= 1.5 tablespoon
Cumin seeds=1.5 tablespoon
Fenugreek(vendhayam)=1.5 tablespoon

Eppo,

1) Wash and Wipe the brinjals. cut them into small 1 inch peices. Now in a tray or a big plate, place them evenly and apply salt. Then keep it in the sun for about 3-4 hours.
2) Now slice garlic(30) and ginger(4 inch). Keep this aside.
3) Now separately grind each of the ingredient I have mentioned in Part II, with a small amount of vinegar. I mean vinegar from the whole amount I mentioned, thevaikku yaetha mathiri u can use while grinding it.
4) Then in a pan, heat the oil, fry sliced garlic and ginger slightly. Then start adding each grinded mixture from (3) one at a time. Pour any remaining vinegar. AFter a min or 2, add the brinjal pieces, sugar, tumeric powder and curry leaves.
5)Now cook on a sim fire till brinjals are tender. Add salt as per ur taste, remove from fire, cool it and then store it a clean water ellama irukara jar.

akka can I use the huge egg plants ...bit hard getting hold of tiny baby ones :think:

how many huge ones can I use in the recipe? is one enough akka? :think:

Athu vanthu vera onnum ellai Sweetlotus, paavam valluvar, vasuki samaichu pooda mataenu solitaangalaam, eppadi in-directa guestkku poodunganu sonna, namba avarai invite panuvoom ellaiyaa, athukku solraar.

1) Garlic illaama panninaa nannaa irukkuma. 'cuz I dont like garlic in pickles.
2) Can we add red chilli powder instead of grinding red chilli?
3) Can I use tamarind instead of veneager?

Sure.

(1) This recipe is WITH garlic Priyanka, we cant make it without it and get the same taste. The other way is use brinjals, peppercorns(1.5 spoons), jeera( 1 spoon), yellu iruntha konjam and mustard seeds(1 spoon)
Now grind all the spices. Then in the pan fry the cut brinjals in oil, half cookeda irukarchae, add this paste and let it simmer, oil ellam mela varum and the masala would have completely soaked the brinjals. now add tamarind pupl(oru small lemon sizekku yaeduthu karathaithathu) and chilli powder(2 spoons) and salt to ur taste. now let it to thicken. chilli powder, tamarind water and salt, unga tastekku yaetha mathiri add panikoonga.
