All u need:

Around 300 to 400 Gms of Corriander(approximately 3 bundles)[ Do not dream of getting a large cup, at the end of the process u ll get only a small cup}

Salt 2 tea spoon

Tamarind 1 tablespoon
Red hot chilly : 5 (if small 8)
Oil:

Wash the corriander, cut the roots.

Leave it for 10 minutes so that the water get drained.

Add some oil in Tawa and add the corriander, and keep frying the corriander with low flame...

once the water content in the corriander decreases.

Switch off the Gas and leave it for 5 minutes do not burn the corriander.

Turn it occasionally while cooking

Fry the red chilly along with the mustard.

Take only the red chilly.

Now transfer, fried red chilly, corriander, tamarind, salt to a mixer and grind it to form a soft paste.

Taste now. Add tamarind and salt to suit u r taste (remember the spice will drop once u start cooking)

Transfer the paste to a tawa and with low flame , mix it occasionally

after 10 -15 minutes, if the paste is thick u can add mustard to it and it is ready to eat

Shelf life: If stored in a dry & clean container and stored in refrigerator : maximum 12 days.

Goes well with plain rice, an alternative to pickle as well
