I have been thinking for a while to have a thread like this.

(1) Rachel Ray in Food network, does a show - 30 minute meals. I thought we could have one like that, so for those working, studying, they can just spend 30 mins, but still get good meal - lunch or dinner. no breakfast :nono: :sm12:

(2) It can be you own recipes, or from anyone, anywhere, but that DOESNT mean you can cut n paste from sites or give links, you should hv atleast tried it or tasted it. PLEASE DONT POST LINKS, but just the recipe.

(3)Also recipes can be with, canned foods or readymade stuffs too. - Again the restriction is, dont post all the readymade stuff you can think about, if you had tried the readymade mix and if its worth the money then post it. Many readymades suck, thats why :)

This is going to be a sticky, a place where people will come and search for the easy recipes. If I have time, I will try to update the names of the recipes, with the page number in this post. - Like an easy search. So PLEASE AVOID SIDEYs, unless its cooking questions or doubts from the recipe posted.

Kuskha

Ingredients
=======

coconut - 3 spoons
5 small onions
5 garlic
2 spoons corriander powder
2 cloves
2 cinamon
chilly powder(1 spoon) for ur taste,

grinder all the above as a paste (Should be 5 mins job)

Basmathi Rice - 2 cups.

ghee - 2 spoons

(1) In a cooker, heat the 2 spoon ghee and put bay leaves.
(2) put puthina leaves, put this mixture, fry it. 2-3 mins
(3) Add 2 cups of rice, 4 glasses of water
(4) Add salt
(5) Keep for 2 whistles and switch the stove off. Let it be in Dum(Meaning in the same stove).

Goes well with raita (Make this raita when the rice is cooking).

Takes less than 30 mins ;)

Why not just call your friend who is less than 30min driving distance :P .. that would work much better since you even dont have to do your vessels :P...

No its not ghee rice, as in that, we dont add this grinded mixture. This is a muslim type rice item, if I remember correctly :think: suha post panina i guess, athulaiyae fastest version try paninen :)

Rava Dosa

Rava-1 Cup
Rice-1 cup
All purp flour-1/2 cup (Optional)
salt to taste
onion
green chilli
curry leaves/coriander leaves
water
oil

Fry the rava for a while so tht it turs little brown

In a bowl mix the rice flour/all purp flour/rava/salt and add water (so tht it comes to dosa mix consistency) (hve to be very liquid so tht the dosa comes crispy and cook evenly)
(5-10 mns)

meanwhile cut onions/chilli/leaves
in a pan put little oil fry everything and add it to the dosa mix
(5-10 mns)

make dosa in the dosa stone/pan
(5-10 mns)

hve with chutney/sambar/milakapodi/vathakolambu :) (ethulam should be prep in advance :) )

30 minutes food a 2 mins type pannanumngaradhukkaga first post a edit senju second post pottingala :P ....

I like onion rava and the wheat dosa tastes more like chappati though :P

Chinese Style Vegetable Fried Rice

Ingredients
=======

Rice - 1 cup
4 tbs peanut oil
1/4 teasp garlic paste
1/4 teasp ginger paste
(If you have ginger-garlic paste, then 1/2 teaspn of it.)
Frozen veges - u will get the stir fry mix, u can use that too or just beans-carrot-peas-broccoli or cauli mix kekadikkum, buy and store it.
2 tbs soy sauce
1/4 tbs chilli sauce


(1) Cook rice and keep it separate - 15 mins
(2) In a wowk, or pan, heat oil, ass garlic, ginger paste, fry for 30 secs, then add the frozen veggies and stir fry for 3 mins.
(3) Sir fry soy and chilli sauce next for 1 min, now add rice and mix well and heat thouroughly for 3 mins.

There you go :b:

Those who eat eggs.

Before doing the (2) step, do scrambled eggs and keep it aside. Then finally add this to the rice, Egg Fried rice ready :)

Peas Pulao

Basmati rice - 2 cups
Green Peas - 1 cup
Ginger-Garlic paste - 2 tsp
Water - 3 cups
Perinjeerakam- 1 tsp
Cinnamom - 2
Cloves- 5
Bay leaves- 2
Elakkai - 4
Chopped onion - 1
Green chillies - 2
Vegetable oil or ghee
Coriander leaves
Salt - As reqd

Soak rice in water for half an hour.Heat oil in a pan for about 2 minutes. Add Perinjeerakam, bay leaves, cinnamon sticks, cardamoms & cloves and stir for a few seconds.Add onions, green chillies, ginger & garlic paste & peas. Stir and fry for about 2 minutes.Then, add rice and fry and a dd salt & water and stir it.
Allow it to cook.Garnish the pulao with coriander leaves and serve hot.

Baby corn pakoda:

1.one canned baby corn - contains may be 12 or 15 pieces.
2.first wash and drain the baby corn because it is soaked in the salt water already.
3.take 4 tablespoon full of channa basin flour and 2 tablespoon full of rice flour.
4.mix both with the water as batter consistency.
5.add to that little bit of chilli powder,salt and little bit of aseafotida powder.
6.then dip the baby corn into the batter and fry it one by one in the oil in vada sutty.
7fry it till golden brown.
8.tastes well with chutneys or sweet and sour sauce.
9.enjoy. :b:

It is very good during the evening snacks with the hot coffee. :D

Vegetarian Noodles

Ingredients

2 dried black mushrooms/any other mushrooms
6 oz. rice noodles
3/4 cup vegetable broth (optional)
2 Tbsps. soy sauce
2 Tbsps. vegetarian mushroom/oyster sauce
1 Tbsp. chili sauce
1 tsp. sesame oil
1/2 tsp. sugar
1/4 tsp. pepper
3 Tbsps. vegetable oil
1 tsp. fresh ginger, minced
3/4 cup shredded cabbage
3/4 cup carrots, grated
3/4 cup fresh bean sprouts
1 piece tofu, cubes and fried
1/4 cup sliced preserved vegetable (optional)

Instructions

1. In a bowl, soak mushrooms in warm water to cover until softened, about 10 minutes; drain. Discard stems and thinly slice caps.

2. If using dried rice noodles, soak in warm water to cover until softened, about 10 minutes; drain.

3. Combine sauce ingredients (vegetable broth, soy sauce, veg mushroom sauce, chili sauce, sesame oil, sugar, and pepper) in a small bowl and stir. (make sure it doesnt taste salty... adjust to your taste)

4. Place a stir-fry pan over high heat until hot. Add 2 tablespoons of the oil. Add noodles and stir-fry for 1 minute. Add half the sauce and stir to evenly coat noodles. Remove noodles from pan.

5. Return stir-fry pan to high heat. Add the remaining 1/2 tablespoon oil. Add ginger then add mushrooms, cabbage, carrot, bean sprouts, celery, and preserved vegetable. Stir-fry until vegetables are tender-crisp, about 2 minutes.

6. Return noodles to pan and toss gently. Add the remaining sauce, and tofu and stir to evenly coat, and cook for 2 minutes. Serve.

- another way of cooking is removing step 4 and add noodles at the end b4 turning off the heat.
- you can add any vegetables of your taste, eg: capsicum(thinly sliced), babycorn etc
- i have not added garlic n onion coz i dont eat them.. but you may add it (minced garlic and onion thinly sliced)
- if you want it to be non-veg jus add your favourable meat (duck/chicken will be suitable)

serves 1 ; preparing and cooking time = 30 mins :ee:

Dry red chilli/green chilli-4
curry leaves few
Coconut(grated)-1 cup
Rice - 1 cup
salt to taste
cashew

Cook the rice sepearetly

In the pan add oil/butter and add all seeds,curry leaves,red/green chilli fry for some time
Once they are cooked add salt/coconut and swtich of the stove and in tht heat stir it well.

In a bowl take some rice and add some conut mix and then add rice and remng cocnut and stir well.

You can have chutney or vadams or chips or papad

1/2 Lime juice
Rice - 1 cup
salt to taste
cashew/peanut
turmeic powder

Cook the rice sepearetly

In the pan add oil/butter and add all seeds,curry leaves,red chilli fry for some time
Once they are cooked add salt/lime juice/turmeric powder and cook for some time so tht the powder smell goes off. Cook it in low flame.

In a bowl take some rice and add some of the cooked mix and then add rice and remng mix and stir well.

You can have coconut chutney or vadams or chips or papad

Curd Rice

1 cup cooked rice, cooled
1 cup fresh beaten curd (yoghurt)
1/4 cup chopped coriander
salt to taste

1 tsp cumin seeds
1 to 2 green chillies, Chopped
1 tbsp urad dal
1 pinch asafoetida
4 to 6 curry leaves
1 tbsp oil

In a large bowl, combine the rice, curds, coriander, salt and mix well.
In a pan heat the oil and add the cumin seeds When it starts to splutter add the split black lentils, green chillies, asafoetida, curry leaves and sauté for a minute. Mix it with the rice.
Serve chilled.

You can also add green grapes/cashew/pomogranate seeds/pieces of cucumber which will give added flavour to curd rice.

Rice, Vatha Kulambhu and Spinach curry

Rice - As usual keep rice.

Vatha Kulambhu
==========

Ingredients
=======

Fenugreek seeds - 1.4 spoon
tumeric powder - 1.4 spoon
chilli powder - 1.4 spoon
sambhar powder - 1.4 spoon
mustard, urad and channa dhal - konjam konjam
curry leaves - konjam
red chillies - 1
tamarind - small lemon size, soak and take 2 cup of it.
Any following vege that you have or you can just make it without any
(1) Ladysfinger - cut and fried
(2) Small onions
(3) kothavarangai
(4) brinjal
(5) i dont remember now :oops:

(1) Heat a kadai, pour 2 full spoon of oil, add mustard, urad, channa, fenugreek one by one and fry it for 1 min, add curry leaves and red chillie, split - fry another 20 secs. Keep in low flame.
(2) Add tumeric, chillie and sambhar powder, fry for 30 secs..
(3) add any veges you have or omit this step.
(4) Pour tamarind and add salt. Keep it in low flame for 15 mins.

Spinach curry
=========

2 spoons of onion nicely cut
1 red chillie
1.4 spoon of garlic, nicely cut or 1.3 spoon of garlic paste
coconut powder - 1 spoon
frozen cut spinach - every grocery store will have it.. buy loads of it.. will be very helpful. - 1.5 cup

(1) Heat kadai, add oil, mustar, urad, red chille and curry leaves. Fry for 1 min.
(2) add onion and garlic, fry for 20 secs, add frozen spinach. add 3 spoons of water. Add water.
(3) Keep in low flame for 5-10 mins.
(4) Add coconut powder, mix well and take it off stove immed.

Enjoy - Vatha kulambhu and spinach curry :b:

If you have more than 2 burner stove, you can do both vatha kulambhu and spinach curry simul within 30 mins and in the 3rd keep the rice. :P

Mango Rice

1 cup rice
1 cups grated raw mango
4 tbsp peanuts
Salt to taste
Masala :

1 tsp mustard seeds
1 tsp asafoetida powder
2 red chillies
1 green chilly
1/2 tsp turmeric powder
1/2 cup grated coconut

*****************
3 tbsp oil
1 tsp mustard seeds
1 tsp urad dhal
1 tsp channa dhal
A few curry leaves
1 tbsp finely chopped coriander leaves to garnish

Method :
Cook the rice and set it aside to cool.
Grind the ingredients for the masala to a fine paste, adding half the grated mango.
Heat 3 tbsp oil, add all the ingredients for seasoning.
When mustard seeds splutter, add the peanuts.
When the daals and peanuts turns golden, add the remaining grated mango.
Cook for a few minutes on a medium heat till the mango is done.
Add ground masala and cook till the raw smell disappears.
Remove from heat and set aside.
In the meantime, to the cool rice, stir in this cooked masala little by little, till the masala blends with the rice.
Garnish the mango rice with the finely chopped coriander leaves and it's ready to serve.

Flour roast panninaa it will be uppumaa.. :P Not dosai.

Take ordinary, unroasted, plain, rice flour, add enough water, oru 5 mins vittutu, dosa seiyunga.. azhagaa varum.. :)

KoodavE chutney + chicken kurma + chinna-vengaayam sambar ellaam pannittu, send me a packet.. I will taste and certify.. :P :P

Usually I charge for tasting services, but as a new customer courtesy for Geetham users, you get once free. No problem at all. :b:

Ideally its best if you use a non-stick pan. And..
Use a littttttttttle drop of oil. Smear it nicely on the pan. And..
Do not use high flame/temperature on the stove. Use medium. And...
Very thin dosa usually will stick. Thicker ones will not. And...
Its usually an art. Only practice makes it perfect. And finally...

I haven't mastered it yet.. Only half the time I get it right.. :P

put oil in the pan/kalu and then put the dosa mix.....

usually first time it will not come proper..bt oru dosaiku apurum nalla varum.....Rombe thick /rombe thaniyavum eurka kudathu mavu consistency.....

Vasan sona matri if u practice na olunga varum pa
