fruit cake

350g flour
600g dry fruits(sultanas, raisins, cherries, candied citrus peel, apricots, pineapple, etc)
1 pinch salt
1/4 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp mixed spices
45g margarine
225g sugar
grated lemon rind of 1 lemon
1/2 pint (uk) water (250ml)
3/4 tbsp bakiong soda


- grease tin, pre-heat oven 180C
- sift flour, salt, spices into a bowl
- rub in margarine to dry mixture, mix in sugar
- mix all fruits together and the grated lemon rind, add to above mixture
- make a hollow in the centre of the mixture and add the water, stir lightly
- warm 2 tbsp of water pour over baking soda, then stir it thoroughly into the mixture.
- bake for 1 1/2 hours at 160C, cook for longer if not baked (check using a thin knife inserted into the centre of cake.)



tip:
- for more flavour use 100ml of orange juice with 150ml of water
- to prevent the cake from burning at the top cover with aluminium foil till the last 10 mins

Looks pretty simple. :ee: Will try it this weekend. Gonna use half the portions of all though. This will be about 1.25 kg.. and thats way too much..

rr.. How important is it to use the (powdered) mixed spices.. and do you know what are the spices mixed in it?

Did you try the neighbourhood bakery? :think: I am sure they would be willing for a handsome fee.. :wink: :P Heck, they will come, deliver, sing a song too, if you pay them.. :P

If you don't want to pay in cash, you can 'pay' with your life, and get married. :) (kaNNirandum viththu siththiram vaangina kathaiyaa aanaalum aagalaam.. :wink: :P)

honestly, I just mixed cinnamon, cardamon, ginger, nutmeg together and added 1 whole teaspoon of the lot in the cake mixture.

I have no idea what's in the "mixed spices", but you can buy then from the store pre-mixed, if you really can be bothered :ee:

I have this bad habit though...that is...I tend to eat all the fruits before adding to the mixture, now how do I go abt preventing that? :think: :D

mixed spices contain: Coriander Seed, Cinnamon, Caraway Seed/cummin, Cassia/chinese cinnamon, Nutmeg, Ginger, Cloves.

ps: Not quite sorry about the side track.. :P If you can add sultanas to a cake and make it interesting, you can add side-tracks to a recipe and make it not boring.. rr.. right? :oops: :P
