Assured for Trying - நீங்கள் இதை முயற்சி செய்யலாம்.

AVIAL IS MAINLY AVIKKARATHU, MEANS STEAMED FRESH FOOD!!! good for tongue and good for tummy and good for health :)

INGREDIENTS:

 Vegetables (given below) - diced .
 Cooking oil (samaiyal yennai) or sunflower oil (sooriyakandhi yennai) for seasoning.
 Black mustard seeds (kadugu).
 Curry leaves (kariveppilai).
 Cumin seeds (seeragam).
 Fresh Green chillies (pacchai milagai) = one chilli for each cup of vegetables, split into two.
 Turmeric powder (manjal podi) = one pinch for each cup of vegetables.
 Salt / Sea salt / Rock salt [if using rock salt use one and half times as much as the sea salt] (uppu) = as required.
 Fresh yoghurt / curd (pudhu thayir) = 1/4 cup for two cups of vegetables.
 Coconut - shredded (thengai - thuruviyathu) = 1/4 cup for each cup of vegetables.


Parboiling drumstick is recommended.

1. Parboil (boil incompletely) vegetables, if you use frozen vegetables please adding a little salt while boiling.

viz. carrot
beans
cauliflower
snake gourd (pudalangaai)
raw banana / plantain (vazhakkaai)
drumstick (murungakkaai)
potato (urulaikizhangu)
red yam (sivappu senaikizhangu)


or else skip point 1.

SEASONING:

2. Heat a little oil for seasoning (if u prefer keralite taste you can use coconut oil) and when hot (test by putting two black mustard seeds and see if they splutter) add mustard seeds and if possible fresh curry leaves after the mustard stops to splutter.
NOTE: ususally mustard seeds are not used, if you like that flavour you can use it.

3. Reduce the heat.

4. Add a bit of cumin seeds and mind they do not get charred.

5. Add green chillies and fry for one minute and you can smell the aroma.

IF YOU PREFER YOU CAN ADD SAMBHAR PODI / MALLI MILAGAI PODI for taste. if you sutract one chilli and can add one quater of a teaspoon of chilli powder for it.

[u]STEAMING:

6. Add the vegetables and add little water as required, cover the vessel with lid and allow them to cook on steam (produced by the little water you add / sprinkle).

Note:

For a cup of vegetables :

Carrot requires minimum water to boil, even sprinkling handful for 1 cup of carrot is enough.

Bean requires 2 handful.

Cauliflower requires 1 handful.
Plantain requires 3 handful.
Parboiled drumstick requires 2 handful.
Potato requires 3 handful.

7. Add turmeric.

8. Add salt half way through the cooking and sprinkle little water if needed.

9. Add curd and allow to the vegetables to cook completely.

FINISHING TOUCH:

10. After the vegetables are cooked completely, add fresh shredded coconut, just before getting down from stove.

11. Serve hot.

SERVING SUGGESTIONS: taste good as side dish for sambar and paruppu saadam.

MY VIEWS: while you cook you can use you hands to do many things, rather than spoon like our mom / grannies do (don't say hygiene you are not cooking for a hotel, it is for yourself or your family, so wash hands properly and that is the best hygiene). I personally think only this adds that taste or aroma what we call as 'KAI MANAM'

That is really true, I 've always admired to do when I cook by myself and experienced people liking it.

There is definetely a different taste (admirable) when you put your hands provided make sure you wash your hands so that it is hygenic as sandhiya says.


KAI MANAM concept is true and one more fact is true.

When you cook a nice food, you may not be able to eat 'cause you are filled with cooking, Honestly, It is not a joke.

i accept that wholeheartedly. even i have experienced it. and i think that might be the reasons why moms eat less that others.

'kai manam' unmaithaan... Yen kaiyil manam iruuko illayaiyo theriyaadhu (i use spoons exclusively).. Amma cook pannumpodhu mattum aana nalla theriyum.. :) especially when she grinds some stuff in 'ammi'.... Even Rasam tastes so much better.. Still, I don't know if its because she touches it.. or is it because of the way she cooks... I also agree that when you cook, you might not be able to eat... :) My technique is to have some coffee... relax, shower and then comeback all hungry to eat...

anyways, thanks for sharing this recipe sandhiya...

nalla paadichu paaru sri-gan. nee sonnadhu correct- aana adhukku karanam yenna-innu question kettaen.. :) Theriyavillai-nnu padhil sonnen...

gotcha? (kaluvara meen'la naluvara meen appadinnu kelvi pattu irrukeya?)

Good recipe sandhya...just to add to it ...just before u turn the stove off...add little bit coconut oil to the avial...it gives a better flavour :ahha:

I agree with sandhiya, kai manam adds to taste. when I cook I find it not good but if my mum or my hus cooks then I find it taste good eventhough I do the same way they make it still it does'nt taste good. or maybe b'cos you are there in front of the stove getting all the smell and you lose your appetite.

2) Can't cook all the complicated business because of being single.
3) NEVER use processed food for various reasons..

These days u can't expect a girl to cook well.........Recollect my friends experience which I had shared with u.........long back.......
Irrespective of no of people.....u have to go thru the same process....either its single or married ...doesn't make much difference when it comes to cooking ....if u know how to cook..

The simple solution for the problem is stop thinking of aviyal....:dance:
