Kara Sev

Type 1

Ingredients :
Rice Flour - 1 1/2 cups Besan - 1/3 cup
Black Pepper - 1 tsp (Coarsely grounded) Ghee - 3 tbs (or) Butter - 3 tbs
Salt - 1 tsp Baking Soda - a pinch
Oil - to deep fry

Procedure :
In a plate, mix the ghee / butter, salt and soda together. Add the besan, rice flour and ground pepper to this mixture and mix thoroughly. Add very little water and knead into a thick dough. Heat up the oil in a deep kadai. Hold a holed ladle over the oil and press small amount of the dough through the holes. These will fall into the oil as thin strips. Deep fry these until golden brown and crisp. Remove and drain off the excess oil over a paper towel or tissue.

Type 2

Ingredients :
Maida - 1 1/2 cups Rice Flour - 3/4 cup
Cumin Seeds - 1/2 tsp Sesame Seeds - 1/2 tsp
Pepper - 1/2 tsp Omam - 1/4 tsp
Coriander Seeds - 1/2 tsp Butter - 1/2 tsp
Oil - to deep fry

Procedure :
Mix the butter, cumin, sesame, pepper, dhaniya and omam and add 2 cups water. Heat up this mixture in a heavy bottomed vessel. When it starts to boil, add the maida and rice flour. Mix well until it thickens. Remove from the heat / fire and pour over a dusted rolling board. Beat this mixture evenly with the rolling pin. Let it cool down for a few minutes. Knead the dough well. Fill small amounts of the dough in a press and using a 3 holed ("Thengozhal") mould, press the dough into thin long pieces. Cut these pieces at various points and stick the edges together in form of small rings. Heat up the oil and fry these rings until golden brown and crisp. Work in batches and deep fry the entire dough as small rings. Store in airtight containers.
