Lemon Rasam

Ingredients:
1/4 cup toor dhal
1 cup water
a piece of fresh ginger (2 1/2 cm, 1 in), peeled and grated
4 green chilies
1/2 tsp cumin seeds
3/4 tsp black peppercorns
1 1/2 cups water
1/2 tsp ground turmeric
salt to taste
2 tomatoes, quartered
juice of 1 lemon
coriander leaves, chopped to garish

For Tempering:

2 tsp ghee
1 tsp brown mustard seeds
1/2 tsp asafetida powder
1 red chilly halved
a few curry leaves

Preparation:

Wash toor dhal well. Drain. Place dhal in a heavy saucepan. Cover with 1 cup water and bring to the boil. When boiling, cover pan with a lid, leaving slightly ajar. Lower the heat, and simmer dhal gently for 45 minutes to 1 hour or until soft.

Stir several times during the last 30 minutes of cooking. (The water should be mostly gone). Set dhal aside without draining. Using an electric blender or food processor, blend the fresh ginger and green chilies into a paste. Now blend or process the cumin seeds and black peppercorns into a powder. Set both aside.

Place the undrained cooked dhal in a heavy saucepan. Add 1 1/2 cups extra water, ground turmeric, salt to taste, and ginger/Chile paste. Slowly bring to the boil.

Tempering:

Heat 2 tsp ghee in a heavy frying pan or skillet. Add mustard seeds, asafetida powder, halved red Chile, a few curry leaves, and pepper/cumin seed powder.

When the mustard seeds splutter, add this mixture to the rasam. Turn off the heat and add the lemon juice. Garnish with chopped coriander.

Serve hot with rice.

oru chinna doubt lemon rasam - will it have tomatoes???


plz clarify aruna, and really it is delicious one. complements for it.

It have tomatoes,see in the recepie.And thanks for ur comments

Your doubt is right... Lemon rasam will not have tomatoes... then it will become tomato/lemon rasam. Lemon rasam came only to be a substitue of tomatoe and tamarind...

Lemon rasam recipe ethoo..

(1) Thuvaram paarupu(cooked) - 1/2 Cup

(2) Green chillies - 3-4 (cut it in big peices.. then into half).

(3) seeragam - 1/2 spoon

(4) melaggu - 1/4 spoon (In that take few and crush it and keep it aside)

(5) Lemon juice - 5 spoons. (4 for mild)

Now Mix the paaruppu, then green chillies, seeragam and the whole pepper and heat it. Let it come to a boil. then add the crushed pepper and let it boil for another 5-8 mins.. No add the corriander leaves.

There are 2 ways to add the lemon juice now.

(1) Add it when its in the stove and then immediately off the stove..

(2) Off the stove, let it cool and then add the juice.

Serve it with spicy curry..

We can use tomatoes, i tried the recipe nalla than irrunthuchu.

Tamarind was not there in the original recipe.

I didnt say you SHOULDNT use..

All I said is, lemon rasam'na. the main ingredeint should be lemon.

Puli rasam'na - puli..
thakaali rasam'na thakaali..

So if you mix and match these, the taste of the main one will be subsided...

Obviously, having tomato in that rasam will be tasty, but the taste will be different from the actual lemon rasam..

Also, To differentiate I told Tomato and tamarind together...
I know tamarind wanst in that recipe.
