Soft Idly and Dosai
These proportions are only for grinding in a mixer. I don't know the exact proportions for a grinder.

Parboiled Idly Rice or Long grain rice-2 cups
Urid dal-1 cup (Uluntham paruppu)
Javvarisi-1/2 handful
Vendhayam-1/4 spoon
Cooked rice(Sadham)-1/2 cup

1)Soak rice, javvarisi and vendhayam together in a bowl of water for 4-5 hours
2)Soak urud dal separately in water for 4 hours.
3) Drain the water from urud dal and grind adding little water and keep aside. Urud dal has to be grinded to a very soft consistency. So grind urud dal for a longer time. This yields good results. See to it that u don't run the mixie continously for a long time. Else it will get hot which will result in repair. So grind in intervals.
4) Now drain water from rice mixture and grind them along with cooked rice adding very little water. Softness need not be upto the level of urud dal though the rice mixture also has to be smooth one.
5) Now mix both urud dal and rice mixture and add salt. Mix well
6) Allow this to ferment for over 10 hours. If it has fermented properly, u can see that the mixture looks bulged with quantity more than the original. If fermentation is not proper, u will get only hard tasteless idlys
7) Pour this into idly moulds and steam cook for 12 minutes. Toc heck whether idly is cooked, take a knife and dip it into the idly. If nothing sticks to the knife idly is cooked. Do not steam cook for a very long time as this will also harden u'r idly. If using cooker do not put cooker weight at all.
8) The same maavu can be used to make dosai. Only that u have to add little water to the maavu to bring it to pouring consistency.
