Omapodi

Type 1
Ingredients :
Rice - 3/4 cup Channa Dhal - 2 cups
Omam - 1 tbsp Salt - 1 tsp
Butter - 3 tbsp Oil - to deep fry
Procedure :
Powder the rice, dhal and omam into a fine flour. Sieve to remove larger particles. To the fine, sieved flour, add the butter and salt. Mix water little by little andknead into a soft thick dough. Heat up the oil in a deep kadai. Fill a small amount of the dough in a press ("Ural" or "Kuzhal") and use a mould with fine holes. Over the hot oil, press out the dough through the mould. Deep fry over a medium flame until light brown and crisp. Work on the remaining dough likewise and deep fry. Drain off the excess oil. Store the omapodi in airtight containers as whole large pieces or broken down into tiny pieces.

Type 2
Ingredients :
Besan - 2 cups Rice Flour - 1/2 cup
Omam - 1 tsp Salt - 1 tsp
Ghee - 2 tsp Oil - to deep fry
Procedure :
Clean and soak the omam in water for 1/2 hour. Make into a fine thick paste along with the salt. Add this paste to the besan, rice flour and ghee. Add water little by little and knead into a soft thick dough. Heat up the oil in a deep kadai. Fill in a small amount of the dough into the press ("Ural" or "Kuzhal") and use a mould with thin small holes. Press out the dough through the mould over the hot oil. Deep fry until light brown and crisp and drain off the excess oil in a paper towel or tissue. Continue to work on the entire dough in batches.
Alternative :
You may use 1/2 tsp chilly powder instead of the omam. Mix this with the salt and other ingredients and knead into a soft thick dough.
