Vatha Kolambhu

1 lemon size Tamarind or tamarind concentrate
1 large Onion
1 large Tomato
1 tsp grated Coconut
1/4 tsp Mustard seeds
1/2 tsp Fenugreek seeds
1 tsp Toor Dal
5-6 Red Chillies
Pinch of Asafoetida
4 tsp Sesame Oil
Salt to taste

(1) Soak tamarind in hot water for 10 min. and take out pulp (you should be able to get 2 cups of tamarind water).
(2)Fry fenugreek seeds, toor dal and red chillies with a drop of oil until they become little crisp.
(3)Grind onion, tomato grated coconut and the fried mix of toor dal, fenugreek seeds and red chillies to a paste. Do not add water while grinding.
(4)In a pan heat sesame oil, add mustard seeds. When they start spluttering, add the tamarind extract and boil at low heat for 5 minutes.
(5)Add the grounded paste, salt to taste and pinch of asfoetida. Boil the mix for 12-15 min. until the mix gets a thick consistency.
(6)You can also add some rice flour mixed with water to thicken the kolambu
(7)Serve it with Hot Rice and fried Papadam

Easy and Simple

Appalam Vatha Kolambu

Gingelly Oil (Nalla yennai) - 5 table spoons
Mustard (Kadugu) - 1 tsp
Channa dal (Kadalai paruppu) - 1 table spoon
Dried Manathakkali - 1 table spoon. (If u dont have this.. dont worry..)
Dried Red Chillies (molaga vathal) - 2 to 3
Asafoetida powder (perungaya podi) - as desired
Turmeric powder (Manjal podi) - 1/4 t.spoon
Curry leaves (Karuveppilai) - 5 to 6 leaves
Kozhambhu powder or Sambar powder- 1 table spoon(heaped)
Tamarind - Medium lemon size.
Appalam - 3 to 4
Salt - as desired.

(1) Take a pan with gingelly oil and heat it.
(2) In the meantime,soak tamarind in water in a separate bowl and squeeze it to get tamarind water.
(3)Add mustard, channa dal, dried manathakkali, dried red chillies, asafoetida powder and turmeric powder to the heated oil.
(4)When the mustard splutters, add curry leaves and sambar powder to this.
(5) Give a couple of seconds for sambar powder to soak in oil and saute the mixture.
(6) Break each appalam into halves and add them to the above.
(7)Add tamarind water to the above, immediately. Let the above boil for five to ten minutes.
(8)Add one glass (240 ml) of water and salt to this and let it boil for ten more minutes.
(9)Check for the consistency and if it is as thick as sugar syrup, put the gas off.

Easy to do..

Shy fenugreek kooda add pannalam for seasoning,also tamarind extract ootina aparam add chilli powder n curry leaves just for variation.

Mix 1tsp of rice flour in water(min amount) and then pour it in the kuzhambu to get a thick consistency.

WOW!! super! i tried making it...it was toooo good.Thanks a lot for the recipe...i have a doubt.in the second recipe you mentioned about appalam.is it fried one or the raw one?
I am a malayalee trying to learn tamil recipes.so if any one need kerala recipes just ask me :D
