Vegetarian Phad Thai : Rice Noodles cooked in peanut and Soya sauce!

Name of Dish :Vegetarian Phad Thai
Origin : Thailand
Type : Curried Noodles (do not need an accompaniment)
Approximate cooking time : 20 minutes
Ingredients

1. Flat Rice Noodles 1 pack
2. Red curry paste 1 tbsp
3. Tamarind Paste 1 tbsp
4. Onions 2 large, thinly sliced
5. Brown Sugar 2 tbsp
6. Bean Sprouts 1/2 cup
7. Roasted Peanuts 1/2 cup crushed
8. Green Pepper 1 large chopped
9. Mushrooms 4 large, chopped
10.Soya sauce 1/2 cup

Procedure

1. Boil the noodles in a separate pan with little water for about 10 minutes. It should become soft but not soggy.

2. In a frying pan, add some oil and fry the onions until golden brown.

3. Add the crushed peanuts and fry for 1-2 minutes.

4. Now add the red curry paste and cover the pan for 1-2 minutes. You can add a little water to prevent the paste from sticking.

5. Add the chopped green peppers and mushrooms and cook until the vegetables are soft.

6. In a separate bowl, mix the brown sugar, tamarind paste, soya sauce and mix well.

7. Once the vegetables are cooked, add the soya sauce mix to the pan. Cover and cook for 3-4 minutes.

8. Now add bean sprouts and mix well.

9. Lastly add the cooked noodles and mix thoroughly.

Serve warm with sliced lemons! It tastes yummy!!! You can add as many vegetables as you want and make it even more healthier!
