Dashratan Korma (Navratan Korma with a twist!)

Navratan Korma is a Mughlai speciality very popular in North India. This dish is typically composed of 9 (Nav) main ingredients ('Ratans' or Jewels) cooked in aromatic spices! I have modified this dish and added another "ratan" to it......Coconut!

Type : Curry to be served with Rice or Roti


Ingredients

Dashratans- '10 Jewels'
Onions 2 large (chopped finely)
Cashews 1/2 cup
Almonds 1/4 cup
Golden raisins 1/4 cup
Peas 1/4 cup
Carrots Chopped 1/4 cup
Beans Chopped 1/4 cup
Pineapple diced 1/4 cup
Paneer cut into small cubes
Coconut Milk 1/4 cup

Spices
Cumin seeds 1Tbsp
Bay leaves 2
Cloves 5-6
Black Cardamom 1
Green Cardamom 2
Cinnamon 1/4 tsp
Nutmeg 1/4 tsp
Kashmiri Mirch 1/2 tsp
Garam masala 1/2 tsp
Coriander Powder 1/2 tbsp
Other ingredients
Plain yogurt or buttermilk 2 cups
Oil 1 tsp
Salt


Procedure

Heat a pan with 1 tbsp oil and fry the cumin seeds.

Add the finely chopped onions and saute them until brown.

Now add the coriander powder and fry for a minute.

Add cloves, black and green cardamoms, cinnamon, nutmeg, Kashmiri mirch, bay leaves and garam masala and fry for another minutes.
Powder 1/4 cup cashews and add to the mix. Stir constantly and mix for about 1 minute.

Now add the yogurt, simmer and close the lid for about 5 minutes.
Cool and blend this mixture into a thick paste.

Now add the vegetables. It is better to steam the vegetables before putting it in so that you don't have to cook the curry for too long.

Add the paneer after all the vegetables are cooked. Cook for about 1 minute and add the coconut milk.

Simmer and cook for 4-5 minutes. Serve hot with Naan, Roti or Rice!
