SAMBAR POWDER


Redchillies - 20 to 30 count.(depends on ur taste)..
Dhania - ¾ cup
Urad dhal - ½ table spoon
Channa dhal - ½ table spoon
Thoor dhal - ½ table spoon
Black Pepper - ½ table spoon
Turmeric Powder - ½ inch
Hing (asafoetida) - 1 spoon
Curry leaves 3-4 sprigs
Fenugreek - ¼ spoon
Mustard - ¼ spoon
Jeera - 2 spoons (optional)

Dry roast all the items individually on a very low flame. Grind and store it.


Rasam Powder

Red chillies - 10 count
kadalai parappu - 1/2 tsp
thoram parappu - 1/2 tsp
Mustard Seeds - 1/2 tsp
urad dhal - 1/4 tsp
Dhania seeds - 1/4 tsp
Jeera - 2 tsp
Black pepper - 1 tsp
Fenugreek seeds - 1 tsp
Asafoetida powder - 1 tsp
2 or 3 springs of Curry Leaves

Grind it in grinder to not too fine powder, but not too course. Pack it in a glass air tight jar.


Curry powder

Chillies - 200 gms.
Dhania seeds - 150 gms.
Black pepper - 15 gms.
Fenugreek seeds - 1 tsp
Mustard seeds - 1. 5 tsp
Jeera - 1. 5 tsp
Black gram dhal - 1 tsp
Thuvaram Parappu- 1 tsp
Idli Rice - 1. 5 tsp
Asafoetida 1 tsp
Turmeric powder 1/2 tsp
Curry leaves 1/2 Cup

use your mixi and grind to powder all the ingredients properly.


PULAO MASALA

Dhania - 100 gms
Jeera - 15 gms
chillies - 5 gms
Pepper - 10 gms
Cloves - 10 gms
Cinnamon - 10 gms
Cardamom - 10 gms
Bey leaf 3 nos
Poppy seeds - 10 gms
Turmeric (powder) 3 spoons

Dry roast all the items and grind it.


IDLY PODI

Urad dal - one cup
Kadalai Parappu - 1 tbsp
Red Chillies 10 nos
Dhania seeds 1 tbsp
Asfoetida 1 spoon
Tamarind 1 marble
Salt 1 tbsp
Garlic - 2 flakes(optional)

Dry roast all items and grind it.

CURRY LEAVES POWDER(KARIVEPALLAI PODI)

Ingredients :
3 to 4 bunches of curry leaves
2 tbsps of bengal gram
2 tbsps of split black gram
6 red chilis
1 tsp fenugreek seeds
1 tsp of mustard
1 tsp of cumin seeds
1/4 tsp asafoetida
1 tbsp oil to fry
1 small lime size tamarind
salt to taste

Method :
fry all the ingredients to golden brown in one tbsp of oil(except curry leaves,tamarind,salt)
and now add the curry leaves after switching off the flame.
Allow it to cool and grind it into powder along with tamarind and salt.
It tastes excellent with rice and butter.

IDLI POWDER ( with little variation)

Ingredients :
1/2 cup bengal gram
1/2 cup split black gram
10 red chillies broken
1/4 tsp asafoetida
1 tbsp oil
salt to taste
Method : Fry all the ingredients in the oil and grind them into powder adding salt.

Ragi - 1 cup, green gram - 1 cup, wheat - 1 cup, par boiled rice - 1 cup, barley - 1 cup, soya - 1 cup, almonds - 1/4 cup, cashewnut - 1/4 cup, dried corn - 1cup
Roast these separately in a dry pan and grind.This can be used for salt as well as sweet kanji. In addition, we can peel and grind 6-8 cardomoms along with the other ingredients. This powder should be used only for sweet kanji.
