Carrot Burfi


Ingredients:

1 kg carrots (peeled and grated)
1 litre full cream milk
450g sugar
150g khoya
100g ghee
For decoration:
2 tsp chopped pista
2 tbsp chopped cashews
1 tbsp chopped almonds
1/2 tsp cardamom powder
Carrot Burfi

Method:

1.Cook grated carrots and milk in a pan on a medium flame.
When the mixture dries up, reduce the flame and keep stirring.
2.Add the sugar and cook till the mixture dries up. Keep stirring continuously.
Add the grated khoya and ghee. Fry until the mixture becomes semi-solid.
3.Turn the mixture onto a greased metal tray.
4.Press down evenly and decorate with dry fruits and cardamom. Cut into diamond shaped pieces.

Cashew Katli


Ingredients:

100g cashew nuts
80g powdered sugar
1 tsp corn flour
1/3 tsp rose essence

Method:

Soak cashews in water for 1-2 hrs. Drain and grind them to a fine paste, using water if required.
Mix together the sugar and cashew paste. Cook in a pan on a medium flame.
When the mixture thickens, reduce the flame and keep stirring. When the mixture leaves the sides of the pan, sprinkle corn flour. Stir well and remove from fire immediately.
Mix in the rose essence and quickly turn onto a greased marble or wooden surface.
Roll thinly with a greased roller. Spread the silver sheet over and cut into diamond shaped katlis

Kaju Katri


Ingredients:

4 cups cashews, ground into fine powder
4 cups sugar
1 cup water
Aluminum foil



Method:

1.On medium heat, boil the water and add sugar till it becomes into a syrup.
2.Make the syrup thick enough for the cashews to be mixed in it.
3.Mix the ground cashews in the syrup then turn off the gas and pour the material on an aluminum foil sheet and roll it flat with a rolling pin into a thin layer.
4.When it is cool, cut into small diamond shapes and serve.

Preparation time: 30-40 minutes

Pista Katli


Ingredients:

100g pista
75g powdered sugar
4 drops rose essence
1/4 tsp cardamom powder
1 silver sheet for decoration


Method:

1.Soak pista in water for 30 minutes. Drain water and grind to a fine paste.
2.Mix the pista and sugar well. Cook in a pan on a slow flame and keep stirring for 7-8 minutes.
3.When the mixture thickens and leaves the sides of the pan, remove from fire and mix in the essence.
4.Transfer the mixture onto a greased rolling pan, sprinkle cardamom powder and press the silver sheet over it.
5.Cut them into diamond shaped pieces.
