Ladysfinger (okra,bhendi) - quartered lengthwise - 400 gms
chickpea flour - 150 gms
crushed ginger and garlic - 1 tbsp each
chopped green chilli -1/2 tsp
chilli powder and carom seeds (ajwain, omam) - 1/2 tsp each
Salt to taste
lemon juice and finely-chopped coriander - 1 tbsp each
Red food colour a pinch
Oil for deep-frying

(1) Mix all the ingredients, except okra, to make a thick batter.
(2) Add water, if necessary. Add okra and keep aside for a few minutes.
(4) Heat oil and deep-fry okra till crisp and cooked.

Serve hot with any chutney or sauce u like :)
