View Full Version : Chicken Biriyani: Chettinad style

Serves 5 people:

All u need:
Chicken 1.5 kgs
Basmatic /tilda rice: 3 .5 cups
Chilly powder 1 tblspn
dhania powder 1.5 tblspn
Chicken masala 1tblspn
biriyani masala .5 tblspn
Bay leaves: 2
Cloves 5
cardamon 2
cashew nuts 10
Pattai -3
Sombhu- 25 gms, or 1.5 tblspn
Mint leaves, corriander leaves
salt as per taste
Turmeric powder .25 tblspn

Onion 3 finely chopped
tomatoes 3 finely chopped
Garlic 8 cloves
Ginger around 40 gms
(In a mixer crush garlic and ginger to make a paste)

Green chillies 8


Step 1:
Clean the chicken add chilly poweder, dhania powder, chicken masala and salt .Keep it in pressure cooker for 1 whistle.

Step2:
In a big kadai , pour some oil and fry sombhu,pattai, cloves,bay leaves, cardamon,
In another kadai /cooker pour some ghee (2 to 3 tblspn)
and fry the rice for not more than 3 minutes....Ensure the rice is warm....

Step3:
add onions, chillies, ginger -garlic mix in the fried stuff(sombhu etc,..) when the onions turns into golden brown add tomatoes and fry. Add biriyani masala Add the chicken mix stuff &fry for 2 minutes...
Fry some cashwenut and add it later when the biriyani is ready 2 serve
step 4:
Transfer the rice into the kadai and add water.
The amount of water u add makes biriyani tastier. Normally add water so that water level is around 3to 4 inches higher than the other stuff( do not add more water than this).
Close the kadai with a lid & the stove shd be lit in medium position(Essential)
Every 5 minutes just mix the biriyani...
Around 20 to 25 min biriyani will be ready to eat..
Add mint, leaves, corriander leaves, and cashew nuts...

when u do chicken biriyani u can add curd 2-3 tablespoons so that the chicken will be soft.u can also add mint and coriander leaves when u fry onions becos it gives a different flavour to ur biriyani.

Hi Katteri!!
Yesterday I was just glancing through and found your Biryani Recipe. I tried it out and came out very well.. It tasted so good.. that I ate most of it....;-) Now thats really nice... Thanks so much..
