Cook the spinach with water in pan for 5 mins until it is well cooked.
Grind it in mixer and make paste of it.
Cook the potato, chop it and keep 'em seperate.(Don't cook too much like paste)

Heat oil and fry mustard and jeera for 1 min. Then put chopped onion and one finger of asephotida and fry until the onion smell goes.
Add chopped potato, smashed garlic and chopped ginger; and slightly cook for 3 mns. Add turmeric powder, green chilly and fry it for couple of mins.
Put chopped tomoato and green peas. Slightly cook for couple of mins.
Add one spoon of coriander powder and salt as per taste.
Add Spinach paste and close it in stove for couple of mins.

Your aalo palak is ready..

A little variation in Aloo palak..

Cook 1 spoon of whole green gram and add to the spinach with green chilles while grinding.

Deep fry the cooked potato cubes and add it to the gravy, instead of adding in early stage. The taste differs and it good too. :P
