    Default Brinjal(egg plant)chutney

    IngredientsforBrinjal(eggplant)chutney:
    Brinjals(Indian type) = 5 or 6
    Tomatoes(medium size) = 2
    Onion(medium size) = 1
    Green chillies = 2 or 3
Tamarind water little bit or tamarind(small ball size)
    Asafoetida little pinch
    mustard and cumin
    salt
    oil for frying
little bit of coriander leaves and curry leaves

    Preparationmethod:

In a tawa, add some oil and then add little bit of mustard and cumin and after it sputters, add some curry leaves. Then add the onions and green chillies and then tomatoes. Allow it to cook for few minutes until the raw smell goes and the juices of the tomatoes releases. Then add the brinjals and allow it to cook for few minutes and then add the asafoetida and tamarind water and also some salt....cook for few more minutes and atlast add the coriander leaves...Then let it sit and cool for few minutes and after that grind it in the mixer and taste the salt...if you want it little bit thick then don't add water too much or otherwise add some water while cleaning the mixer...

This would be great with the hot rice with ghee or dosas...try it and enjoy....this is very simple to prepare. If you feel something wrong in it please share.....
