    I'm using basmathi rice for making idli and dosa dough.
    problem is dough works good for dosa. but not idli. i think this is due to the rice i'm using. here i couldn't get puzungalarisi. i tried some par boiled rice
    but that too didn't work. so i use only basmathi rice.
    Is there anyother alternate rice variety or anyother way to make soft idli.

    Hey sen_shree, I am assuming that u know how to make this stuff and just wnated to know the proportions, so here they are.

    Kadalai Maavu (Besan) 1 cup
    Arisi Maavu (rice flour) 3 cups

    Other Ingredients
    Sesame seeds 1 spoon
    Chilli powder 1 spoon
    Asafoetida/Garlic/nothing optional (plain or any of ingredients to taste)
    Salt To taste

    hi shy,
    thanks for the reply.actually i did with the same proportion.but i added some butter in it.it is very soft and it absorbed lots of oil.anyway i'll try once again and let u know.

    instead of butter try one teaspoon of oil itself while blending the dough and very little water. let the dough be tight.

    before using try a little of it in oil see how it comes out well try the rest OR ELSE try altering the combinations
