Thread: Malabar Chicken Kuzhambu

    Default Malabar Chicken Kuzhambu

    Today I tried this malabar chicken kulamabu. It came out very good. Here is the recipie

    Malabar Chicken Kuzhambu

    Ingredients:

    Chicken – 1kg
    Red chillies- 10
    Coriander seeds- 2tbsp
    Peppercorns-1sp
    Cumin seeds-1/2sp
    Cardamom- 2
    Crushed Cinnamon- 4 pieces
    Cloves-4
    Fennel seeds-2sp
    Chilli powder-2sp
    Bay leaves-2
    Chopped small onion-1 cup
    Chopped tomatoes-3/4 cup
    Shredded coconut- 2 handfuls
    Garlic flakes- 8
    Ginger – 1tsp
    Curry leaves-a handful
    Oil
    Salt to taste

    Method:

    Heat a kadai and pour 2tsp oil to fry. When oil becomes hot add half of the chopped onions and fry until it gets golden brown colour. Then add shredded coconut and fry for few minutes. Now add all the spices one by one and fry well. Then add the powders and fry until the coconut gets brown in color. Grind this to a fine paste. Again heat a big kadai and pour 4 tsp oil. When oil becomes hot, add the remaining onions and fry for a few minutes. Then add tomatoes and fry well. Add chicken pieces and fry for 10 minutes. Then add the ground paste and fry until it is cooked well. Add enough water and salt and curry leaves. Let the kulambu simmer until the chicken is well cooked and the required thickness is obtained.

    May be I shud do this with brinjal pagarkai or vendakai

    Shy, you can also try this with cauliflower or mushroom. I bet it still tastes great. Whenever I try chicken or mutton recipies I also try it with veggies.

    you can also try this with cauliflower or mushroom
    Avanga oorla mushroom non-veg, Doc..

    Teacher.. you can try it out with boiled eggs too.. Potato, ofcourse..

    Shy, kandippa nalla varum. If you add little spices. Usually idha madri masala araitha kulambukku spices nerya potta konjam sodhapidu. It's my experience.

    V sonna madri mushroom aaa non-veg listla serthuteengha Most of my friends who are vegetarians don't eat mushroom . I dunno why.

    me also noticed that...it's very nice on pizza but i haven't heard it being used so much in desi food tho...so i guess sort of understandable...

    anyway, i didn't know bay leaves were used in this kuzhambu is that a modification?

    Teenu.. me made with brinjal today... enakku brinjal avalavaa othukaathuthaan.. but wanted to try something new today.. so ithu senchu kulambhu matum sapiten.. AWESOMEEEEEEEEE supera irunthathu...

    I prepared this recipe with mushroom and it turned out very good ( like mutton kulambu)

    Shy, Ippodhan unga post parkiren. I'm glad you liked it. Oh idhu brinjala kooda nalla irukka. I usually try these kind of masala kulambu with cauliflower or mushroom. I have never tried with other veggies. Let me try with brinjal during the weekday. If you try with other veggies lets us know here
