    Lime pickle

    Marinated limes are a traditional indian pickle. It's better to make in the summer, as the recipe calls for a sunny windowsill (admittedly not easy in some regions!).

    Ingredients:

    convert measurements
    4 green limes
    2 tsp salt
    2 tbsp oil
    1 inch piece root ginger, sliced
    1 tbsp white vinegar
    2 tbsp sugar
    1 tbsp paprika
    1 tsp garam masala
    1 tsp cumin seeds
    2 cloves garlic, sliced

    Method:

    1. Half the limes (don't peel) and squeeze about half of the juice from each piece, then quarter. Place in a large jar with 1 tsp of the salt and seal firmly with a non-corrosive lid, shaking to mix. Leave in a sunny spot for 4 days, rotating once a day to keep everything mixed.


    2. Add the remaining 1 tsp salt to the jar, mix, and leave for 1 month in the sunny spot again. Rotate the jar every second day or two.


    3. Put the oil and ginger in a pan and cook until the ginger is golden. Then add the vinegar, limes and lime juice from the jar. Mix well and cook for about 3 minutes. Add the paprika, garam masala, cumin seeds and garlic, and cook for a further 3 minutes.


    4. Carefully spoon into sterilized jars, and seal firmly. Store in a cool dark place for about a month before eating.

    Red chilli powder 1/2 cup
    Turmeric powder 1/4 t.spoon
    Methi seeds 1/2 t.spoon
    Mustard 1/4 t.spoon
    Hing 1/4 t.spoon

    Cut lemon into small dices, add salt, turmeric, and keep it aside
    for 4-5 days. Add red chilli powder to this lemon and mix

    Roast methi seeds and dry grind it and keep it aside.
    Heat oil in a pan, and add mustard, and hing and let it cool.
    When the above oil becomes room temperature, mix it with the
    lemon, and add the roased methi powder.

    Ginger big piece peeled and finely chopped
    Green chillies 15 chopped
    Turmeric powder 1/4 t.spoon
    Methi seeds 1/4 t.spoon
    Mustard 1/4 t.spoon
    Hing a small pinch
    Salt 2 t.spoon
    Cooking oil 2 t.spoon

    Method
    Cut lemon into small dices, add salt, turmeric, and keep it aside
    for 4-5 days. Add red chilli powder to this lemon and mix
    it well.
    Roast methi seeds and dry grind it and keep it aside.
    Bring 2 cups of water to a boil and add this to the soaked lemon.
    Fry mustard, hing, green chillies, and ginger in oil and add this
    to the lemon.
    Add the roasted methi powder when the above is cool (ie) room temperature.

    I asked my wife to try in the second way and she has prepared it..but do we need to keep it aside on a sunny spot area for some time after this?? Shy give me your suggestions

    Sunny spot not necessary Chitracheenu.....u r keeping it aside cos appo thaan nalla oorum with salt....lemonoda skin konjam tender aagum,so adhukaparam chilli powder maththa ingredients add pannina nalla irukkum......that s y u r keeping it aside for 4-5days....namba oorla jaadi la pottu veppaanga.....

    Oh now I understand, ethai solreengala.. yes as unique said, just ooraruthukku thaan appadi we are keeping so just in normal room temp is fine

    But once everything is prepared, cool it and tthen we shud keep it in a airtight container enga jadi kedaikaathu as unique said but u get that canister, I forgot that name, i have for all my pickles thou Ellaina many other airtight containers are available
