Okra Pickles:
Ingredients:

2.5 kg okra
2 litres vinegar
250 ml water
125 g salt
8 cloves garlic
8 dried or fresh chillies
Method:
1. Remove excess stems and thoroughly wash okra.
2. Mix the vinegar, salt and water. Bring to the boil.
3. Drop okra into boiling vinegar mixture, and bring back to a rolling boil for several minutes.
4. Place okra and vinegar mixture into sterilised jars, and add one clove of garlic and one dried/fresh chilli into each jar.
5. Seal jars tightly. Store in a cool dark place for 8 - 10 weeks before serving
