    All types of dosai - by selpra..



    Tomato Dosai

    Ingredients

    Boiled Rice 1 Kg
    Tomatoes 1 Kg
    Red Chillies 7
    Salt to taste
    Mustard 1 tsp
    Curry Leaves little

    Method:


    Wash and soak the rice for 2 hours.
    Grind rice, tomatoes, red chillies together to a smooth paste add salt and mix well.
    Season with mustard and curry leaves and make dosai.

    Banana Dosai


    Ingredients:
    4 ripe bananas
    6 tbsp sugar
    2 tbsp self raising flour (or 2 tbsp plain flour + 1 level tsp baking powder)
    1 tbsp rice flour
    2 tbsp chopped cashewnuts
    1/2 cup milk

    Method:
    Except for the chopped cashewnuts, put all other ingredients
    in a liquidiser and blend to get a pan cake like consistancy.
    (If the batter is too thick add a little more milk. If it is
    too thin add a little more flour. Pass the batter through a
    strainer to remove all lumps.)

    Lastly add the chopped cashewnuts
    and mix. Keep batter aside for half an hour.

    Heat a non stick frying pan and add a little butter. Pour
    spoon fulls of batter in the pan to make small pancakes.
    Serve warm or cold with honey or ice cream.

    Masala Dosai
    Ingredients
    Dosai maavu(fermented one)

    For the Masala
    Potato - 2 (cooked and mashed)
    Onion - 1 (chopped)
    channa dhal 2 tbsp
    urad dhal 1 tbsp
    mustard seeds 1/2 tbsp
    Oil - 2 tsp
    green chilli 4 to 5
    turmeric powder 1/4 tbsp
    Salt - 1 tsp


    Procedure :
    For making masala:
    Keep a kadai , pour oil,
    then add mustard seed, when it sputters, add the channa and uraddhal.
    Now add green chilli, onion and turmeric powder to it and let it get fried.
    Now add mashed potato ans salt and stir well

    now masala is ready for filling.

    Heat up a tawa and smear it with oil. Add a ladle of the dosai batter and as the bottom side starts to turn golden brown in color, place about 1 spoon (how much ever u want according to your taste) of the masala that has been prepared in one half of the dosai closer to the center. Carefully cover the masala with the other half of the dosai and ensure that the edges cover the masala completely. Turn over and cook both sides evenly adding oil as needed around the edges.

    NOTE:
    For preparing Masala Dosai, use the fermented batter.

    Methi Dosai

    Rice 3 cups
    Fenugreek seeds 1 tsp.
    Poha (pufffed rice) ½ cup
    Sour curds ½ cup
    Oil for frying
    As required
    Salt To taste

    Preparation

    1.Wash and soak rice and fenugreek seeds separately for 5-6 hours.

    2.Wash the poha, mix the curds and fenugreek seeds and grind to a fine paste.

    3.Then add the rice and grind further to a fine paste.

    4.Remove, mix it well with salt and keep aside for 8-9 hours.

    5.Keep the tava on the fire and rub with a little oil.

    6.Take 1 deep spoon of batter and spread it around.

    7.When the dosa turns brown and crisp remove and serve with chutney

    Ghee Roast Vegetable Dosai : (Specially for madhu from selpra)
    Ingredients
    Dosai maavu(fermented batter)

    Vegetable Stuffing:
    1. Potatoes - 1 no. med sz (finely chopped)
    2. Greenpeas - 2 tbpsn (frozen) or (if you are adding cooked add it just before turn of the heat adjust the salt)
    3. Beans - 10-12 no. (finely chopped)
    4. Carrots - 1 no. med. sz. (finely chopped)
    5. Capsicum - 1 no. med. sz. (finely chopped)
    6. Cabbage - 2 tbspn (finely shredded)
    7. Onions - 1 no. med. sz. (finely chopped)
    8. Ginger - Garlic paste - 1 tspn
    9. Green chillies - 3-4 no. (as per your taste)
    10. Red chilli powder - 1 tspn
    11. Turmeric powder - 1/2 tspn
    12. Coriader powder - 1 tspn
    13. Garam masala powder - 1 tspn
    14. Juice of 1 med. sz. lemon
    15. Coriander leaves - 2 tbpsn (finely chopped)
    16. Oil - 1 tbspn
    17. Ghee - 3 tbspn

    Method:

    FILLING:
    Take a kadai on med-high heat oil in it then add onion & green chillies to it fry it until light brown
    the add ginger-garlic paste fry it for one second then add chopped vegetables to it stir close the lid
    and allow it to cook for for 2 - mins.
    After 2 mins remove the lid add all the powder masalas(red chilli,turmeric,coriander,gara m masala powder)
    and salt stir well close the lid allow it cook for more 4-5 mins until done.
    Turn off the heat allow it to cool and then add coriander leaves & lemon juice mix it well.

    To Make Stuffed Dosai:
    Take a non-stick tava heat it on med flame, smear few drops of oil on it wipe it with a clean cloth,
    then take a ladle of batter on the girdle spread quickly cover and cook for 2 mins.
    Then keep 2 tbsp of filling over the dosai and fold to seal the filling,
    smear ghee on both the sides roast it to golden brown.
    Serve hot with sambhar and onion chutney.


    Note:

    JUST BEFORE MAKING DOSAI ADD SUGAR (LET IT STAND FOR 5 MIN) AND MIX IT (FOR GOOD BROWN COLOUR

    huh...? Maavu pulikka venama?? Rice flour will be raw, right??

    Normal Dosa Maavu-la tomato paste mix panni panna mudiyuma, Selpra?

    Correct vasan, I do have the same question. .. maavu pulikanumae.. also.. tomato mix panina, appuram dosai maavu kaetu poogaatha?

    But namba oorla thara mathiri, u can always do tomato dosai like this.

    (1) Cut tomatoes in small pieces and put them in the first side, put oil and carefully turn it back, once cooked, enjoy. Also u can add very small pieces of oinion too.

    (2) Tomato chutney(vengaya chutney, corriander chutney..but no coconut chutney) iruku ellai, athai put it evenly in the first side of the dosai, little bit of oil. U can have this as a thin dosai, so no need to turn it back. thats it.

    (3) Onnum ellathavanga, amma kudutha, podi iruku ellai, athai one side pootu, oil pootu, when done, turn it carefully on the other side, cook it and enjoy...

    Note : For those u cant make dosai maavu at home, readymade dosai mix vachu epppadi ellam panni sapita thaan dosai mathiri irukum

    I remember chopping tomatoes for mom... I think that how she used to make it.. Same way for Onion Roast (?) also..



    Ready made dosai mix is not great... but I guess if you can't do anything, something is better than nothing...

    vasan,you can very well make a paste of tomato and mix it with already prepared maavu, nothing wrong i tried that too it s coming well and you can store in refridgerator, i tried that too its coming out well.

    What u had mentioned is ok.. selpra... the recipe u had said is to make the maavu itself with tomato.. will that come out good, i mean maavu pulika vaipoom ellai after grinding it.. appo tomato kuuda iruntha will it happen? have u tried that???

    yeah shy, it will come but the main thing is you have put the dosai thick, it will be somewhat like adai size, got it! i tried to put thin dosas it was in pieces.

    Selpra... just for identifying easily.. post reply all the dosai variaties in the same topic. so that we can easily get want we want.. for example see rice variaties.. on how sabesan has posted

    Also in this way we can make sure no duplicates..

    have u tried dhosai with Rice,moongdhal(pachaiparuppu), kadalai paruppu & ulundhu paruppu....soak them for 2 hrs & grind them with onions.greenchillies & ginger...& make dhosai..U dont have to wait for it to pullichufy....its good to make when u have unexpected guest

    appaaadi, ithanai thumbsup kudutha, now I am all (feeling shy-nnu solla vandhen...)

    amma-kku veetila udhavi senchu pazhakkam... aana something wrong with me.. I try cooking but for some reason things get messed up... Recipes vachu, padichu padichu senjaalum, something goes wrong and nothing comes out ok... yenna panna... Vidhi yaarai vittadhu...

    Microwave recipes are good... Still have to try the ones you folks have been posting...

    Gobi Masala Dosai

    Ingredients
    cauliflower, cleaned, chopped and boiled -600 gms
    finely chopped onion - 200 gms
    coriander leaves, finely chopped -1 tbsp
    green chillies, finely chopped -10
    cumin seeds -1/2 tsp
    mustard seeds -1 tsp
    turmeric powder -1/2 tsp
    1 tbsp oil
    Salt to taste

    (1) Heat oil in a wok and splutter mustard seeds. Add cumin seeds and saute for 30 seconds. (2) Add onion and chillies. Saute till onion turns pink. Mix in turmeric, cauliflower and salt.
    (3) Cook for five minutes, ensuring that the mixture is dry.

    (4) Prepare the dosa as u normally prepare. When just done, spread a tablespoon of the stuffing on it.
    (5)Let it cook for a minute and fold over.

    Serve hot with your favorite chutney and sambhar.

    Garlic Gravy Dosai

    Ingredients
    garlic, peeled and chopped -500 gms
    shallots(pearl onions) - 100 gms
    onions and tomatoes, chopped -6 each
    tamarind, soaked in one cup of water -1 lemon-size
    dried red chillies, broken - 10
    black gram, split (urad dal), aniseed and fenugreek seeds -1 tsp each
    chilli, pepper, cumin and aniseed powders -1 tsp each
    turmeric powder -1/2 tsp
    asafoetida a pinch
    oil -1 cup
    Salt to taste

    (1) Heat oil in a pan and stir-fry asafoetida and garlic for a minute.
    (2) Add onion and shallot and saute till it turns pink.
    (3) Add tomato and powdered spices and cook till semi-dry. Add salt and cook till almost dry.

    (4) Make dosa as u normally prepare. Then spread a tablespoon of the filling. Let it cook on medium flame for a minute and fold.

    Serve

    Cheese & Spring Onion Stuffed Dosa

    Mozzarella cheese grated - 500 gms
    spring onions, chopped -1 bunch
    1 tbsp oil

    (1) Prepare dosa as u normally prepare.
    (2) Sprinkle cheese just a minute after you spread the batter on the tava.
    (3) As the cheese begins to melt, sprinkle spring onion.
    (4) Fold the dosa and let cook for a minute. Serve hot.

    will yield 4 dosas.
